20ml Brisbance Gin
45ml fino sherry
7ml simple syrup
5 mint leaves tonic water, to top (preferably Fever Tree)
Garnish: Mint bouquet, lime wheel
In a Collins glass, muddle the mint leaves in the simple syrup. Add the gin, sherry and lime and fill with ice. Top with tonic water. Garnish with a mint bouquet and a lime wheel.
